After a full day of cooking on Saturday (four recipes in 12 hours!), I was looking for something simple on Sunday morning. It was key that there be no baking required, but I didn't want to just pour a bowl of cornflakes either. Oh, I also had some strawberries that desperately needed to be used.
I hit the jackpot when I found this lovely strawberry recipe from Martha Stewart.
4 ounces Greek yogurt
6 large, fresh strawberries, stemmed and halved
2 teaspoons honey, room temperature
1 tablespoon shelled unsalted roasted pistachios, coarsely chopped
Place yogurt and strawberries in a serving bowl.
Drizzle with honey, and sprinkle with pistachios.
Martha calls this a dessert, but I have to tell you, it was a wonderful breakfast.
I rarely top yogurt with anything other than plain fruit or granola. It sounds silly, but I had never even considered pistachios or honey with strawberries. Which is the whole point of this fun experiment called The Resolved Cook, finding inspiration and new ideas even on the most mundane of mornings.
