2 cups low fat Greek yogurt
3/4 cup mini semi sweet chocolate chips
Place chocolate chips in a microwave safe bowl. Add about 1/2 cup of yogurt to the bowl and microwave on high for 45 seconds. Remove from microwave and stir until chocolate is completely melted and incorporated into yogurt. Let cool to room temperature.
Stir chocolate into remaining yogurt. Spoon into popsicle molds.
Freeze for at least 6 hours.
While I love the tangy Greek yogurt in these popsicles, I'm not quite sold on this recipe.
If it seems too good/easy to be true, it probably is. Two ingredients isn't enough to get the depth of flavor I was hoping for in these pops.
You could add vanilla or some cocoa powder to the yogurt, but I think next time I'll just go for the Smitten Kitchen version. Sometimes you just need some butter and whole milk:)
