No. 111: Avocado Toasts with Pepitas & Sea Salt

Toast is having a moment. It's the latest artisanal food craze in San Francisco.

I, like many, think $10 toast is humerous. Fancy toast? Really?

Well done, hipsters. Well done.

But, another part of me totally gets it. Such a simple dish, yet endlessly adaptable. Top it with artisanal butters, homemade preserves, heirloom tomatoes with sea salt ... whatever you want for any type of meal.

Avocado Toasts

This Guest of a Guest article inspired my interest in avocado toast. There are some killer places to find it in NYC. I figured I could recreate my own version easily at home.

1 avocado
Juice from 1/2 a lime
Sea salt, for topping
Pepitas, for topping
2 slices bread, toasted

To make

While bread is toasting, smash avocado and lime together in a bowl.

Spread avocado on warm toast with a fork. Sprinkle with sea salt and pepitas to your taste. Serve warm.

The results

These were so, so good. A fantastic breakfast for a busy Saturday.

Even after running errands and going on a little hike, I was still super full. Avocado is the best.

Here are some other terrific ideas for fancying up your avocado toast:

Or just make it into a grilled cheese. I might have to do that this weekend.

How do you dress up your toast?
