No. 158: Devils on Horseback

I've seen many variations of 'Devils on Horseback' over the years:

  • Prunes wrapped in bacon
  • Fried oysters wrapped in bacon
  • Dates wrapped in bacon
  • Dates stuffed with almonds and cheese, then wrapped in bacon

Luckily, the common denominator in all of those situations is salty, fatty bacon. Mmmm.

This variation of the classic party appetizer was inspired by Martha.


8 slices of bacon, cut into thirds
24 dates, pitted*

*Trader Joes has some of the best quality Medjool dates in stores.

To make

Soak toothpicks in water 10-15 minutes before using. While they soak, preheat oven to 400 degrees. Line a large rimmed baking sheet with foil.

Wrap bacon pieces around dates and secure with toothpicks.

Bake on sheet until bacon is browned, about 20 minutes, flipping halfway through.

Hot and ready

Serve warm.

The results

These were such a crowd pleaser that we made a second batch by popular demand. Everyone snapped them up piping hot right off the plate.

Final plate

The kicker for me was the thick cut, pepper crusted bacon. The heat and spice of the pepper paired wonderfully with the salty pork and sweet dates. I highly suggest it!

And if you want to get fancy, you can take everything up a notch by stuffing the dates with chorizo or your favorite cheese (Stilton would be terrific).
