Cilantro is one of my all-time favorite herbs. The idea of turning into the main component for jazzing up my salads made it hard not to try this dressing! I also loved that this didn't use any oil.
1/2 bunch of cilantro
1/4 cup of cashews or pumpkin seeds
Salt to taste
1-2 cloves of garlic
1 lime squeezed (you can sub lemon as well)
Blend all the ingredients in a blender or food processor. Adjust seasoning and amounts of ingredients as needed.
While I was blending my ingredients, things were looking less creamy and a bit more chunky. I added a tablespoon of water and extra squeeze of half a lime which did the trick to getting a smoother consistency.
And yum. It's pretty delicious. I used pumpkin seeds but I think I'd love cashews in it even more. This dressing is fresh and full of flavor. A nice alternative to processed vinaigrette.
