No. 340: Healthy Chocolate Banana Muffins & Raisin Bran Muffins

Yes, I know the muffin man. His name is Popper:)

My parents have a great raisin bran muffin recipe that they have been making for the Mini McCs for the past few months. It's quick to bake and the kids adore helping 'make the muffins.' You'll find the recipe below, courtesy of Mamaw.

They've also become big fans of the "Muffin Man" song because it usually is followed by a tasty snack:)

While Mr. McC and I were out of town a few weekends ago there were many muffins made, as was evidenced by my children suddenly knowing the location of every baking sheet and cooling rack in the kitchen.

This morning James was reaching into the cabinet and pining for the muffin pan, so I gave in and looked for a fun alternative version to bran.

Healthy Chocolate Banana Muffins

These muffins are healthy, simple and delicious.


Makes 12 muffins
3 ripe bananas
2 eggs
3/4 cup quick oats
2 scoops of chocolate Shakeology (you could sub in 2/3rds cup of any chocolate protein powder)
2 tablespoons honey
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon cinnamon

To make

Preheat oven to 350 degrees. Line a muffin tin with or you can use spray to grease.

Place all of the ingredients in a blender, (or food processor), and blend until mixture is smooth.

Divide mixture evenly between 12 muffin tins, no more than 3/4 full.

Bake for 18-22 minutes, or until toothpick comes out clean.

Note: Be sure to use either silicone or foil liners with the paper insert removed because they will stick, and they will appear to be “sunk” in as does any muffin made with oats rather than flour.

The results

YUM. These are chocolatey and delicious with a lovely hint of banana to make you feel like it's not totally decadent.

Obviously the kids gobbled these up during lunch without really taking a breath. I sort of did the same thing...they are really yummy;)

I'm bracing for dinnertime when James will demand more muffins. He does love food like his mama.

Bonus Recipe: Raisin Bran Muffins

From Mamaw's kitchen and a favorite snack of the Mini McCs.


3 cups bran flakes
2 cups buttermilk
1 cup applesauce
1/2 cup vegetable oil
2 eggs, beaten
1/2-3/4 cup packed brown sugar, sweeten to your liking
2 1/2 cups flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups raisins or dried cranberries

To make

Preheat oven to 350 degrees.

Place the bran cereal in a large mixing bowl. Pour in buttermilk, applesauce and oil and combine well.

Mix in eggs and brown sugar, then add dry ingredients. Stir just enough to combine. Fold in dried fruit of your choice.

Bake desired number of muffins for 25 minutes. Store remaining batter in the refrigerator in a tightly covered container for up to six weeks.
